Many of you probably know that the US east Coast was hammered by its first blizzard of Winter. In New York, we hear a lot about how badly we are going to be struck (and stuck) and more often than not, it is a much weaker version of the storm that lands on our shores. Exceptions were ofcourse Hurricane Sandy, and the snow dumps we got in the weeks after that rain blast.
This weekend we were under blizzard warning. We got several feet of snow yes, but this was possibly the gentlest blizzard I have ever seen. The snow was not swirling and flurrying in anger; it was windy but not, I am going to blow you right off the road strong. It was an day's worth of elegant build up in fresh powdery white fluff. The stuff of fairy tales really.
It also helped that this was the first blizzard I felt like I got a lot done. Correction: It was one of the most productive days in general! The last week has been interesting, as I have been realigning and readjusting my self. One of the things I had promised to explore and did not get the time over the last few months was painting, doodling, coloring. I got to do that. I baked, cooked and photographed and did not feel drained by it all. And, watched marathons of The Good Wife! All in a day!
Plus, I went for a walk! Something about the clean virgin whiteness of fresh snow is not one I can stay away from. Usually, people wait till the next day to make the most of the blizzard's presents. But, yesterday given how light the elements way, they were out already. There was enough snow on the sidewalks for kids to toboggan literally in front of their houses! People were making snowmen and in general there was more activity on the day of blizzard than expected! It was lovely! :)
Back home, I made savory waffles with more vegetables in them than flour. They turned out awesome, so you will be seeing them here soon! And, this berry crumble. It is a recipe inspired by of my work colleagues at the last project and I have made it a few times already and love it! It is so simple and so satisfying, and, can be made in any size. Plus, when it is cold out, it is the best feeling to switch on the oven, have sweet aromas wafting through the house, hold a warm plate and bite into the melting cool of ice cream. Isn't it?!
Btw, this ice cream is made from goat's milk. No, I did not make it. I found it in the store and had to try it. I think they went too far in making the ice cream resonate with main stream ice creamers. It was way too sweet; I imagine they added the sugar to mask the natural tang of the goat's milk. Which is unfortunate because that tang is the unique flavor element I was looking for. Other than that, I am not sure how the goodness of goat's milk is outweighed or not by the additional on unneeded sugar. Nevertheless, texturally, it was lovely; creamy and just scoopable straight out of the freezer.
Gluten Free Blueberry Crumble
{Inspired by a work colleague}
3 cups frozen mixed berries
2/3 cup oats
1/3 cup pecans, crushed
3 T butter
1 T honey
pinch of salt
1 T potato starch
2 tsp psyllium husk (optional ; makes for a less runny crumble when used)
Preheat the oven to 350F.
Spread the frozen berries on the base of a baking dish (or several ramekins).
Dust the starch and psyllium husk (if using) over the berries and with a spoon, give it a quick mix.
Spread half the oats on top of the berry layer.
In a small sauce pan, heat the butter and honey just until melted. Do not boil the liquid. Pour half the mixture over the oats.
Press in the pecans and remaining oats over this layer and pour the remaining butter-honey mixture on top.
Bake for 30 minutes, until bubbly and the oats are light golden in color.
You can serve immediately or refrigerate after cooling completely.
