Beat the Blues cookies and Milk


Summer came and swept me away! Yes, indeed! No, I did not mean to and neither did I think it could happen, but, the warm weather has managed to distract me away from this space for rather very long.

For those who wrote and asked if all is well, and if, perhaps, "super well", thank you! I am indeed very good but just 'myself' for now and for the foreseeable future! LOL

Cookies out of oven


Not being active here is not just about my space. I am sorry I haven't been commenting on your blogs although I have been trying to keep up on the reading somewhat. I hope you have all been having a great Summer in the Northern hemisphere and staying warm and cozy Down South.

In an attempt to make up for my absence, I'll leave you with these delicious Oatmeal and Buckwheat Chocolate cookies. I actually baked them on a rainy day when I was feeling a bit blue but they perked me up almost at the first bite!

Oatmeal and Buckwheat Chocolate cookies
(adapted from
Epicurious)

1/2 cup all purpose flour
1/4 cup buckwheat flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup butter, room temperature
1/2 cup sugar
1 tsp salt
3 T old fashioned rolled oats
1/4 cup dark chocolate pieces (optional)
saffron salt or sea salt to sprinkle on top

Dunked in milk


Preheat oven to 350°F. Beat the butter and sugar in large bowl until light and fluffy. Sift together the flours, baking soda and cocoa and gently fold into the butter mixture. Sprinkle the oats over and mix with spatula. Add the broken chocolate and knead to mix in.

Using moistened palms, shape dough into small balls, place on baking sheets and gently flatten the top using the base of the palm. Space them about 2 inches apart.

Bake cookies at 350 F until center is just set and top is cracked, about 10 minutes. Cool on rack for a few minutes. Enjoy warm with a glass of cold milk..
