It's still beautiful around here in NYC although the days have become ridiculously short, creating too many logistical issues for blog photography... I still don't have the night shoot set up. I guess I should.. For Christmas perhaps?
You may have noticed that there hasn't been too much activity from me for a chunk of this year. Mostly because, I have not been cooking a whole lot... I blame it on a lovely summer we had and the urge to make the most of it with friends ... Outside! :)
Now, however, I think it's getting to be time to dust the baking pans and trays and get into the full swing of baking, comfort food and all that jazz. Thanksgiving next week, and general Holiday cheer can only be matched with some good hearty, homemade meals...
Let's start sweet for the season, shall we?! :) Here is a
Fall Apple Bread
spiced lightly with nutmeg for warmth and with a good measure of walnuts to keep the goodness going. This is one of those quick bread recipes.

Apple Walnut Quick Bread
1 cup flour
1/2 cup sugar
1/2 tsp salt
1/2 tsp fresh grated nutmeg
1/2 tsp baking soda
1 egg, whisked
1 cup grated Granny Smith apple, (peeled)
1/3 cup chopped walnuts
1/4 cup butter, melted and cooled
zest of one small orange
Preheat oven to 350 F.
Toss the nuts in about 1/4 cup of flour and set aside. Combine the flour, baking soda, salt and zest. Whisk together the sugar, egg and butter. Mix in the grated apple. Pour the west ingredients into the flour mixture. Fold in the walnuts and remaining flour.
Pour the mixture into an oiled baking mold and bake for 40 mins until the cake is browned beautifully. Cool on rack before unmolding. Dust with orange zested sugar.
