Ok, it is a bit late in the day for breakfast posts... Hmm, even the West Coast should be up and running full swing. but hey! It's Thursday, these things happen, right? Well, they do now. So there!
I have been a bit fussy about my morning bite last few days. Just very restless. I didn't want to do much work but I didn't want instant stuff either. If only I had a cook...! Oh well, I just have to make do with my own two hands.. They are small, I know, but they are mine :)

Back, the morning routines. I don't like them. I like changing things, far too often, far too much. Did I say I am restless? Ok, so you know.
Yet, I have had this for breakfast all this week. And, I am not bored of it!! I am waiting for it but I am still excited about having this tomorrow, again. It's really simple; takes 5 minutes in all and I can put in whatever nuts and fruits I feel like or have on hand. It really becomes different that way every day. And, its fresh. I tried the baked oats thing but that quite wasn't for me, seemed an awful lot of planning and effort for oatmeal.
Cooked oats are my way to go. Since I switched from drinking regular milk to almond milk, a year ago, breakfast is a whole lot healthier too. The nut milk is inherently sweet, so, you really don't need more sweetening but I like a little more flavor, so I chop up a couple of mejdool dates or dried black figs in to it. I have also tried adding a tiny pinch of turmeric and it ads great flavor and color to it!
Oh! flashback moment!

Vegan Oat Porridge
{for one}
1/2 cup old fashioned rolled oats
3/4 cup almond milk or other nut milk
2 mejdool dates, chopped
1 T shredded coconut , unsweetened
nuts for garnish and healthy bulk
In a pan, bring the oats, nut milk and dates to a boil. Reduce heat to simmer and cook for 4-5 minutes. Remove from heat and mix in the coconut.
Serve immediately topped with nuts or other things you like.
