Let me get into the subject then.... Pizza! Whoa! Yes, this one for all the gluten free, marginalised people like me. Quinoa pizza, in particular. My friend told me about it and, I simply could not wait to try it out. For reference, she is the same friend who told me about the Avgolemnon and Cat Cora's recipe. What I really love about this crust is how clean it is! It's simply all quinoa; no additives, no binders, no nothing. Pure, simple and nutty in flavor! And, if you, like me, tend to avoid stabilizers, gums and other extra stuff, you'll love it!

Time seems to running away, at least from me! I am a few hours away from heading out for a close couple's wedding, and then, a month long travel, and, I still have so many loose threads trailing around me. I am consciously not calling it my 'to-do list', you see.
Meanwhile, in between, I am happy that I atleast manage to feed myself well, actually, really well. Bless the person who invented the freezer and then all the technology revolutions that made it a affordable home appliance! I use it as much as I can for make ahead meals. Recently a friend recommended a Greek chicken soup that I was shocked to not have heard of before. It is one of the most comforting, incredibly delicious and satisfying and stupidly easy soups to make.

I have always had a fascination with figs. In India, I only had access to it in the dried form and that was rather expensive. So, it was a treasure that I occasionally got to indulge in, only in the form of sweets - Anjeer Burfi. A paste of dried figs wrapped in a cooked cashew paste. A delight all its own!

There is so much abundance of produce in this season that it is easy to want to have a bit of everything. I think the heat accompanying the season is a self-preserving need. You simply do not have the ability to bear it to make complicated meals, allowing us to enjoy clean and simple dishes to heart's content.
Pesto is a condiment, sauce, whatever, that in its original form has never had much appeal for me. I find it to be too heavy and I rarely taste the flavor of basil underneath all the pine nuts and parmesan cheese, which are so much more earthier in flavor. But, I have always loved the concept of a green sauce. So, ever since I can remember, I have made my own variations of 'pesto'. My favorite green to use in these pestos is the radish top.

Portugal is a relative newcomer to the wine market in the US and as such are generally priced lower than comparable wines from Europe, making them incredible value. Their wines are typically not aged as much and have a fresh, crisp and fruitier note to them. One of my favorites from the country are Vinho Verdes. Literally translated as 'young wines', and originating from the Minho province of North Portugal, they are consumed in the same season as they are bottled. They are one of least known and best crisp Summer value wines you can find this season!
