While the internet is still lit for the baked feta folded into pasta, I think it actually is a better cheese plate centerpiece. Imagine, spreading the lusciously silken feta, scooped over a cracker and then topped with a plump juicy, caramelized cherry tomato. Divine!

Nap Time Squeeze - a continuum of rebranding.
I have yet to master the ability to pick one of many equally plausible options for the time and let go the rest. It’s a work in progress. I am working on it. Like today, I watched 10 minutes of TV while eating lunch, then stared at the beautiful snow falling for 5 minutes. Then just as I was debating whether to watch more TV or the snow, the snow stopped and the TV paused into screen saver and I decided to commit to posting. Et Vôila! :)

Spring has arrived! Today I spotted a blue jay, which, has always been the true marker of Spring. The Cardinals brighten a winter landscape and the blue dashes with Spring’s riot of green! And with that, it is almost binary switch in my kitchen. I want more green on my plate, more vegetables and more fresh looking and tasting stuff. I am not sure how much I can garden this year, as last year’s patch has been completely razed and no longer viable. So, I am definitely focusing on being more mindful of getting produce that is in-season in the local environs (North East for me and ignoring California!). I am also angling towards quicker meals that allow me more time with family and yet bring a touch of special….
